Erode & Salem Finger Turmeric
2.5–3.5% curcumin, bright yellow — the culinary grade
Erode and Salem finger is the culinary workhorse of the turmeric trade and the grade behind most retail turmeric powder. Curcumin runs 2.5–3.5%, which is lower than Alleppey but entirely adequate for cooking, and the colour is the bright, clean yellow that consumers and food manufacturers actually want in a powder — Alleppey's deeper orange-red reads as darker and less familiar on a shelf. Fingers are supplied polished or unpolished, with moisture ≤ 10%, total ash ≤ 7%, acid-insoluble ash ≤ 1.5%, and lead and aflatoxin controlled to destination food limits. Erode in Tamil Nadu is the largest turmeric market in India and sets much of the country's price reference.
Buy Erode or Salem where turmeric is an ingredient rather than a feedstock: retail and private-label powder, masala and curry blends, food processing, and food-service. The economics are straightforward — you are paying for colour and flavour in a kitchen application, and the extra curcumin in Alleppey delivers nothing you can use while costing real money. Move up to Alleppey only if you are extracting curcumin or making a nutraceutical claim tied to curcuminoid content. As with all turmeric, the material risks are lead chromate adulteration used to brighten colour, and dilution of powder with starch or millet flour, both of which are far easier to detect in whole finger than in a ground product. That is the practical argument for buying finger and grinding at destination wherever your operation allows it. Erode & Salem Finger Turmeric — buyer questions
Why buy lower curcumin deliberately?
Because in a kitchen you cannot use the extra. Curcumin content drives extraction yield, not culinary performance — a curry does not taste or look better for 5% curcumin instead of 3%. What a powder buyer actually wants is the bright yellow that Erode gives and Alleppey does not. Paying an extraction premium for a retail powder is money spent on a property nobody will notice.
Polished or unpolished finger?
Polished has had the rough outer skin abraded off, so it looks cleaner and grinds to a brighter powder — the usual choice for retail. Unpolished is cheaper and perfectly serviceable where the turmeric is going into a blend or a processed product. The difference is cosmetic and it shows up in the powder's appearance, not its flavour.
How do I guard against powder adulteration?
Buy finger and grind at destination where you can — dilution with starch or millet flour and colour brightening with lead chromate are both far harder to hide in whole rhizome. If you must buy powder, contract lead, ash and acid-insoluble ash figures with independent verification, because acid-insoluble ash is where added filler and grit show up.
Does Erode set the price for Indian turmeric?
Largely, yes. Erode is India's biggest turmeric market and its quotes are the reference point most of the trade works from, so it is a useful benchmark even when you are buying Alleppey or Nizamabad. Price the specialist grades as a premium over Erode rather than assessing them in isolation.
