Alleppey Finger Turmeric
3.5–5.5% curcumin — the extraction grade
Alleppey turmeric is defined by curcumin content, and at 3.5–5.5% it carries roughly double the curcumin of the common culinary grades. That single number is why it exists as a separate trade line: an oleoresin extractor's economics run on yield per tonne of raw material, so a lot at 5% curcumin is worth substantially more than one at 2.5% even after paying a premium for it. The fingers are deep orange to orange-red rather than the bright yellow of the Tamil Nadu grades, moisture runs ≤ 10%, with total ash ≤ 7%, acid-insoluble ash ≤ 1.5%, and lead and aflatoxin controlled to the destination's food limits. Grown around Alappuzha in Kerala, it is supplied as whole finger, and increasingly as ASTA-cleanliness-compliant sortexed material for regulated markets.

Buy Erode or Salem finger instead where turmeric is a culinary ingredient rather than a feedstock — those run 2.5–3.5% curcumin with the bright yellow that retail powder buyers expect, and paying an extraction premium for a kitchen application is money wasted. The recurring compliance issue on turmeric generally is adulteration: lead chromate has historically been used to brighten colour in some supply chains, and it is a serious food-safety failure rather than a quality quibble. Is the curcumin premium worth paying?
For an extractor, almost always — your yield per tonne of raw material scales with curcumin content, so a 5% lot can be cheaper per kilo of extract than a 2.5% lot bought at a discount. Run the arithmetic on cost per unit of curcumin rather than cost per tonne. For a culinary buyer the calculation inverts entirely and Erode is the better purchase.
Why is Alleppey darker than other turmeric?
Higher curcuminoid content shifts the colour from bright yellow toward deep orange and orange-red. It is a genuine indicator here, unlike colour in pink salt or chilli where appearance and function diverge. That said, do not buy on colour alone — contract a curcumin percentage and have it certified, because colour can be manipulated.
What is the lead chromate issue?
Lead chromate has historically been used in parts of the turmeric supply chain to brighten colour, and it is a serious food-safety failure rather than a quality issue — lead is cumulatively toxic and regulators test for it. We contract lead at ≤ 2.5 ppm with independent verification at load port. Any turmeric programme into a regulated market should be testing for it as standard.
Finger or powder?
Take finger and grind at destination if you can. Whole finger is far harder to adulterate, stores better, and lets you verify what you bought. Powder is convenient and we supply it, but it is where adulteration and dilution occur, so it needs a tighter testing regime and a supplier you have reason to trust.
